The Glycaemic Index Problem

White bread has a glycaemic index (GI) of 70-75, meaning it causes rapid blood sugar spikes. Even many "wholegrain" breads are made from finely milled flour that behaves similarly to white bread in the body. True low-GI bread requires coarsely milled grains or sourdough fermentation.

Tip Top, Wonder White, and similar white sandwich breads score poorly across the board. They're made from refined white flour (NOVA 4), contain multiple additives including 282, and have minimal nutritional value.

"Multigrain" White Bread — Average Health Score: 42/100

Don't be fooled by the word "multigrain." Many multigrain breads are made from white flour with a few seeds sprinkled in. Check the first ingredient — if it says "wheat flour" rather than "wholemeal wheat flour," it's essentially white bread.

"High Fibre" White Bread — Average Health Score: 44/100

Some brands add inulin or other fibre supplements to white bread to boost the fibre number. This is nutritional manipulation — the added fibre doesn't provide the same benefits as naturally occurring fibre from whole grains.
